By now you know that I love to cook, but I am almost always short on time. I struggled for years with how to give my family nutritious, delicious meals on days when I didn’t have much time to spend in the kitchen. That is where these RIDICULOUSLY Easy recipes come in, and I hope they will help you achieve the same goals.
Beef Stroganoff is a favorite in our house, and I have a recipe for it that takes hours. I almost NEVER make that one. Luckily, this Ridiculously Easy version is my family’s favorite, and I can make it in under 20 minutes!! I’m happy to share this great recipe with you.
Here’s what you’ll need:
2 pounds of beef stir-fry meat (I love the kind I can get at my grocery store, they slice it thin, making it cook much faster!) if you don’t have stir-fry meat, slice a pound of sirloin or other low-fat beef into thin strips.
2 packages of sliced mushrooms
2 packages of Au Jus mix
(If you want to make more or less of this recipe, the ratio is 1 pound of beef to 1 package of mushrooms to 1 Au Jus packet. How Easy is that??)
To begin, I sauté the beef over medium heat in a little bit of olive oil, just until no longer pink.
At that point I remove the beef from the pan and pour out the juices from the meat.
Return the same pan to the stove, and add a bit more olive oil, and the sliced mushrooms. Sauté them until softened.
Now, add the beef back into the pan, and sprinkle the Au Jus Mix on top of the beef and mushroom mixture.
Add water to the mixture to make the “Gravy”. I start with about 1/2 a cup of water, mix it in and let it thicken a bit. I then add water to taste, depending on the thickness of gravy I want. I usually end up using a little less than a cup total.
Once the sauce has thickened…You’re done!! Time for some Yummy Stroganoff! I serve it over egg noodles, with a dollop of sour cream to make the sauce even creamier. You could mix the sour cream into the sauce before serving, but my son likes his without, so we put it on when serving. That way everyone can customize it the way they want.
I also serve it with a veggie to round out the meal (almost always peas…I love peas.) The final touch is some freshly cracked pepper. It makes the perfect addition to the dish! Enjoy!!
